Cream of Mushroom Soup with Parsley

Cream of Mushroom Soup with Parsley
This home made soup can be made from scratch and served in about 20 minutes ...
Delicious and nutritious ... If you love mushroom you will love this...
  • In a saucepan melt a large knob of butter and gently fry off until golden either a couple of spring onions, some diced shallots or maybe half a sweet red onion finely chopped.
  • Then add 500grams of sliced mushrooms and sauté for a few minutes until they have softened and  then stir in about a tablespoon of flour and cook this for a further 2 minutes.
  • Gradually blend in 1.5 litres of nice stock of your choice... I have used vegetable because I wanted a vegetarian dish however either chicken or beef would be great... season carefully with salt depending on the stock you have used, fresh cracked black pepper and I have added a large handful of chopped parsley as I love and use fresh herbs in everything I create... it may change the colour of the soup slightly green but a very yummy and nutritious choice.
  • Finally remove from the heat and add 30ml of cream which has been blended with an egg yolk and the juice of 1/2 a lemon and serve.

Apple,Dried Fruit & Almond Meal Crumble

Serve this dessert warm with custard, cream or yoghurt.
It doesn't get any easier than this...

In a large saucepan over a low heat place what ever dried fruit you fancy...Today I have used Golden Raisins,Cranberries and Goji Berries add to this about 1/2 cup of a fruit juice to rehydrate...I have used a berry but any will do.
Simmer this gently to rehydrate the fruit and add a couple of kilos of chunky chopped apples...stir while the apple sort of steams and softens and make sure the juice doesn't disappear...just enough to keep the pan bottom moist.

Crumble is about 100gm almond meal in a bowl, a couple of tablespoons brown sugar  and I have added that yummy moist shredded coconut that is available everywhere. Crumb through with your finger tips about 60 grams of cold grated butter until you get that crumbly look.

Oven proof dish ...
Apple and Fruit (no juice)...
Crumble on the top ...
Bake in a 180 oven until golden and delicious...
Serve with your choice ... custard, cream, ice-cream,yoghurt or just as it comes out of a hot oven.

Pumpkin Soup - "anyway you choose"...

What can I say ... this adaptable little gem is the simplest nourishing meal or snack... Any way YOU choose it...

  • Soften onion ... red, white, brown, leek, spring onion-anyway you choose.
  • Bacon diced ...tin lentils, butter beans-anyway you choose.
  • Add about 1kg chopped pumpkin ... butter nut, jap, sweet potato, carrots-anyway you choose.
  • Cover with liquid ... vegetable stock, chicken stock, whey from cheese making or water-anyway you choose.
  • Coconut milk, cream or not-anyway you choose.
  • Seasoning's ... cracked black pepper, cinnamon, nutmeg, chili-anyway you choose.
  • Blend smooth and serve as pictured ... hot or cold-anyway you choose.

Blini with creamed cheese and chive dressing
These fritter type pancakes made with potato are delicious. Give them a try sometime maybe even tea tonight.

  • Boil, drain and mash 2 potatoes ... set aside to cool.
  • Pan fry 1/2 an onion and also let cool.
  • When all cool mix together with salt & pepper, a handful of chopped parsley, 200ml cream, the yolk of an egg and the whisked egg white...
  • Pan fry in vegetable oil 10cm fritters until golden brown on both sides.
Serve topped with a cream cheese and chive dressing (thinned with a little cream if necessary)and any thing else you desire. My choice for tonight is char grilled zucchini ribbons,chives and a drizzle of olive oil.


Other toppings could be *thin cucumber ribbons * a simple rocket salad dressed with oil and balsamic *thinly sliced smoked salmon.

Crepes/Pancakes - Sweet/Savoury - Both



Make a batter suitable for a thin crepe...below is my guide  and what I did for this batch...prepared ahead of time and reheated through when filled for tonight's tea.

  • 6tbs plain flour, 1 egg and the liquid portion is natural yoghurt, a dash of milk and water made up to 300ml...
  • I use a Bessemer pancake pan and bowl system but you can improvise if you aren't lucky enough to own these.Lime juice, sugar and cream... sweet crepe... what can I say other than today's lunch... yum!

  • Tea tonight are the same crepe served and presented in a square parcel with a mixture of caramelised onions & figs, pumpkin, mushroom,spinach and feta... topped with dressed salad leaves, avocado and icing sugar toasted heavenly almonds .
Pancakes are eaten today, Shrove Tuesday, the day before Lent commences. Pancakes are made from staples that would spoil if not eaten; flour, eggs, cream the consumption of which is traditionally restricted during the self-denial, associated with the 40 days of Lent which starts tomorrow.
