Pumpkin and Spinach layered pie

This meal was so simple and delicious I decided everyone should learn how it was made so that you can enjoy it for yourselves.
* Prepare a round cake tin by placing a piece of baking paper in the bottom and heating your oven to 180°.
* Thinly slice about a quarter of a pumpkin.
* Shred finely about 6 spinach leaves or you could use baby spinach leaves if you prefer.
* Grate a couple of cups of tasty cheese.
* Slice very thinly about a half a red onion.
* Whisk together 4 to 6 eggs with a couple of spoons of natural yoghurt or sour cream.
From here it's as simple as layering everything into the cake tin starting and finishing with pumpkin ... finally pour in the egg mixture and sprinkle a little cheese on top. Bake until pumpkin is soft and cooked right through and a gorgeous golden brown on top.
This pie is also very nice eaten the next day and equally delicious served cold in the lunch box.

Zucchini slice

Zucchini Slice

This slice can be made with the addition of diced bacon that is fried off with the onion stage however in this case a vegetarian version... 

  • In a slosh of olive oil gently fry off half a red onion some crushed garlic and a seeded red chilli.
  • Pop this into a bowl and add two grated zucchini about a half cup of grated mozzarella and about the same of grated parmesan cheeses.
  • Finally add 4 lightly beaten eggs... combine well and season with cracked black pepper and salt.
  • Evenly spread in a slice tin that has been greased and the base lined with a sheet of baking paper.
  • Bake until golden brown... equally delicious served hot or cold.





Don't be afraid to adapt this simple recipe to suit your own tastes such as adding extra vegetables like carrot or fennel or maybe leek in place of the onion.

First and foremost I have to say that I loved, learned and have no regrets... even though I was the only one in the class of Mozzarella Cheese making today that failed. I will not give up stay posted, I have the equipment, the knowledge gained from the fabulous team at "The Cheese Maker" and I have a strong will to succeed. All is never lost I have made a "NEW" cheese because it is still cheese... loved the experience... loved the people... loved the location... loved the CHEESE...

Today I have discovered the stylish art of home cheese making under the skilled business owners from "The Cheese Maker" Tanya & Pamela... The photo clips above were only  one of today's recipes "Fetta" we also made a very simple Ricotta and yoghurt cheese balls which we have marinated to suit our own tastes. The art of home soft cheese making, yoghurt making and sour cream (I will never buy this product again) is not at all daunting and can be achieved by just about anyone. The short courses provided by the girls at The Cheese Maker are a great way to get a basic understanding, purchase all of the necessities required to do this at home cheeses and best of all they welcome and encourage your follow up phone calls and gladly offer you as much ongoing support as you may require. I would highly recommend attending a class.
